Grilled Halloumi with Mango & Greens

This recipe is my saver recipe! We often cook it at 6 pm when we realise dinner’s a while away, the kids haven’t had a shower yet, and art projects and school books still cover the dinner table. This recipe is deliciously cheesy and easy to make. So if you can enjoy having cheese now and then, this recipe is for you!
Ingredients
400 g halloumi cheese (if your family loves halloumi, you will need 600 g)
Juice of 1 small lemon
1 mango
2 cups (150 g) snow peas
2 avocados
1 cup Alfalfa sprout (50 g)
Sea salt, pepper, lemon, and olive oil for seasoning
Preparation
Cut the halloumi in slices about 5 mm thick (¼ inch). In a medium-sized saucepan, place the halloumi pieces and add half of the lemon juice. Cook at medium heat until the lemon juice evaporates, check if the halloumi is brown/grilled and add more lemon juice (but not all) and cook for another minute or until brown color. Then flip the halloumi slices, add the rest of the lemon and cook until brown and crisp. Set aside.
Peel and slice the avocados and cut the mango into small squares.
For each plate: place 2-3 pieces of halloumi, half a sliced avocado, half a cup of snow peas, a few pieces of mango, and sprinkle with alfalfa sprouts.
Dress with sesame oil, lemon juice and a pinch of salt.
